What does "AI" mean in weather and climate models?

Having seen a lot of research fly by, and some breathless claims about accurate weather forecasts, I went for a deep dive for Ars Technica to learn about what's happening with AI (machine learning) in meteorology and climate science.
I didn't find that hallucinated slop is coming to ruin forecasts. But it turns out that machine learning is being applied much differently for weather and climate—and with an interesting set of pros and cons.
